Granola

Skip the store bought stuff and make your own at home!


Makes 3 Quarts


4 cups old fashioned rolled oats (you can substitute one minute oats)

1 TSP cinnamon

1/2 cup melted coconut oil

1/2 cup honey

3/4 cup slivered almonds (or nut of your choice)

1/2 cup sweetened flaked coconut

1/4 cup packed brown sugar

1 TSP vanilla

3/4 TSP Kosher salt


Preheat the oven to 350˚ F.


Place all the ingredients in a large bowl and mix well.


(I added cashews to mine)


Line two large baking pans with a Silpat mat or parchment paper. (I prefer using Silpat mats! See link below.)




Divide the mixture between the two pans spreading into an even layer.


Cook 9 minutes. Remove the pans, stir the granola to coat and spread evenly again. Replace the pans in the oven and cook an additional 8 - 9 minutes. Remove from the oven and let cool. Place in an airtight container. Lasts about 2 weeks!




** After it cools you may add, chocolate chips or dried fruit pieces. At Christmastime I add dried cranberries!


Silpat mats are silicone baking sheets that you can use over and over. They clean up easily with soap and water and your baked goods cook evenly! Please do not buy another brand! I have tried them (Costco) and they are NOT the same thickness and do not cook as well!!
