When you need dinner on the table quick...

15 Minute Pasta

1/2 lb linguine

1 cup red onion, chopped

2 cloves of garlic, minced

1 TB olive oil

1 (14.5 ounce) can diced tomatoes, undrained

1/2 cup sour cream

1/2 cup freshly shredded Parmesan cheese, plus more for garnish

1 TB tomato paste

1/2 cup pasta water


Bring a large pot of salted water to a bowl. Add the linguine and cook about 11 minutes or until al dente.


In a medium size skillet, pour in 1 TB of olive oil and heat the pan to medium - low. Add the red onions and cook about 7 minutes, until translucent. Next add the garlic and cook until fragrant, about 1 minute. Stir in the diced tomatoes and tomato paste, heat through.


In the meantime, remove the linguine from the stove and drain, reserving 1/2 cup of the pasta water!!


Once the sauce is heated through, remove the skillet from the heat and stir in the sour cream and 1/2 cup cheese. Place back on the heat and add the pasta water and stir until combined. Gently add the linguine to the skillet and toss to coat. Serve with extra cheese and some fresh basil if desired.
