Prosciutto Egg Cups

These cute cups are a quick breakfast and so easy to put together.

Prosciutto Egg Cups


Preheat oven to 375 degrees.

Spray muffin tin with non-stick spray.

Place each slice of prosciutto in each muffin cup. Spread the meat to cover the sides and bottom. Place a few pieces of the fresh mozzarella cheese in the bottom of the cup. Crack one egg into each of the muffin cups. Top each with 2 halved grape tomatoes a bit more cheese and sprinkle with the torn basil. Finish with a dash of fresh pepper.

Bake 15 minutes for a more solid, but still liquid yolk.

Remove from the oven and run a knife around the edge to loosen it from the pan. Lift onto a plate and serve.


6 slices prosciutto

6 large eggs

12 grape tomatoes, halved

Fresh mozzarella cheese, torn in small pieces

12 fresh basil leaves, torn

Fresh cracked pepper
